- Ingredients
- 100 grams Millet
- 200 milliliters Vegetable broth
- 4 Beefsteak tomato
- 2 onions
- 5 stalks Peppermint
- 1 pkg (200 grams) cream cheese
- 1 egg
- salt
- peppers
- 1 tsp Margarine (or butter)
Preparation steps
1.
In a saucepan, bring the broth to a boil. Add the millet and cook until tender, about 20 minutes.
2.
Cut a lid off of each tomato, scoop out the inside, leaving a 1/2-inch wall all around. Coarsely chop the scooped out flesh. Peel and dice the onion, finely chop the mint.
3.
In a bowl, mix together half the chopped tomatoes, half the onions, the mint, cream cheese, egg and millet. Spoon the mixture into the tomatoes.
4.
Heat the butter in a skillet and briefly saute the remaining onions and chopped tomato.
5.
Preheat the oven to 175°C (approximately 350°F) convection. Place the sauteed onions and tomatoes in a baking dish and place the filled tomatoes on top. Bake until the tomatoes are piping hot, 20-25 minutes.
