- 1 kilogram Tomatoes
- 4 shallots
- 2 garlic cloves
- 4 Tbsps olive oil
- 1 l Beef broth (or vegetable broth)
- 400 grams Ciabatta
- 1 Tbsp freshly chopped Basil
- 1 tsp freshly chopped thyme
- salt
- freshly ground peppers

Preparation steps

Scald the tomatoes in with hot water, rinse, peel, quarter, remove the core and dice. Peel the shallots and garlic. Cut the shallots into rings and finely chop the garlic. Saute the shallots and garlic in olive oil for 5 minutes, until translucent. Deglaze with the broth and simmer over low heat for about 5 minutes.

Cube the ciabatta. Add the ciabatta, thyme and tomatoes into the soup. Let stand for about 5 minutes. Serve seasoned with salt and pepper.
