- 1 kilogram Tomatoes
- 1 handful mixed Fresh herbs (such as thyme, oregano, rosemary, basil)
- 2 garlic cloves
- 4 Tbsps olive oil
- salt
- freshly ground peppers
- 1 tsp sugar
Preparation steps

Preheat the oven to 180°C (approximately 350°F). Rinse and coarsely chop the tomatoes. Peel and thinly slice the garlic. Rinse the herbs, pat dry, and finely chop. Mix the oil with the herbs and the garlic. Mix with the tomatoes, and place in a roasting pan. Season to taste with salt and pepper and place in the oven. Cook for 20 minutes, stirring occasionally. Sprinkle with the sugar and cook another 20 minutes, until the tomatoes brown slightly.

Remove from the oven, season to taste, and cool briefly. Use this sauce to top cooked pasta. Serve with parmesan cheese as a garnish.
