1 stalk Celery
800 grams Tomatoes
3 garlic cloves
2 shallots
6 Tbsps olive oil
125 milliliters Tomato juice
salt
freshly ground peppers
1 tsp Italian Fresh herbs
100 grams mixed Olives (pitted)
1 Tbsp finely chopped Basil
1 Tbsp butter (in pieces)
Basil (for garnish)

Preparation steps

1.

Rinse and trim the celery, then finely chop. Blanch the tomatoes in boiling water. Remove from the water and peel. Remove the seeds and finely dice.

Peel and finely chop the garlic and shallots. Sweat in the oil, then add the celery and tomato. Stir to combine and sauté briefly. Mix in the tomato juice and italian herbs. Season to taste with salt and pepper, and simmer for 20 minutes.

3.

Halve or slice the olives, add to the sauce, and cook for 5 minutes. Add the basil and the butter. Stir until melted, garnish with the basil, and serve.
