- 1 Tbsp Sunflower seed
- 600 grams green Tomatoes
- 600 grams honeydew melon
- 2 Tbsps balsamic vinegar
- 1 Tbsp lemon juice
- 1 handful coarsely chopped cilantro
- 1 tsp honey
- 3 Tbsps grapeseed oil
- 1 Tbsp Pumpkin seed oil
- salt
- freshly ground peppers

Preparation steps
1.
Lightly toast the pumpkin seeds and sunflower seeds in a dry pan. Remove from the pan, cool, and coarsely chop.
2.
Rinse, trim, and slice the tomatoes. Cut the melon into pieces. Place the melon and the tomatoes in a bowl. Mix in the vinegar, lemon juice, cilantro, honey, and both oils. Season to taste with salt and pepper, and transfer to plates.
3.
Garnish with the toasted seeds, and serve.
