Preparation steps

1.

For the granita, put all listed ingredients in a bowl and whisk thoroughly with a whisk or an immersion blender and season to taste.

2.

Pour tomato mixture into a shallow metal bowl and place in the freezer. Stir every half hour vigorously with a fork.

3.

To serve, scoop tomato granita into a dessert glass and garnish with trout or salmon roe and dill.
