Preparation steps

Blanch the tomatoes in boiling water for a few seconds. Remove the tomatoes from the water and peel. Cut into quarters, remove the core, and finely dice. Rinse, trim, and thinly slice the scallions.

Melt the butter in a pan. Add the flour, stir to combine, and sauté briefly. Mix in the broth and the cream. Bring to a boil, stirring constantly. Add the mustard and green onions, and simmer for 2-3 minutes. Stir in the tomatoes, and mix until combined. Season to taste with salt, pepper, lemon juice, and sugar.
