Preparation steps

Rinseand trim the scallions, then thinly slice. Peel and finely chop the garlic. Sauté with the scallions (minus 1 tablespoon for garnish) in the butter. Sprinkle with the flour, stir until combined, and deglaze with the white wine. Incorporate the wine, and simmer for a few minutes until slightly thickened. Blanch the tomatoes in boiling water and remove. Quarter, remove the core, and dice the tomatoes.

Puree the sauce with half of the diced tomato. Stir in the cream and mustard. If the sauce is too thick, thin with a little broth. If the sauce is too thin, simmer a few minutes until reduced. Season to taste with salt and cayenne pepper. Garnish with the remaining tomatoes and scallions.
