- 8 ripe Tomatoes
- 2 small, white onions
- salt
- freshly ground peppers
- 2 handfuls Basil
- olive oil (cold pressed)
- apple cider vinegar
- 200 grams Goat cheese (rolled in herbs)

Preparation steps
1.
Rinse and quarter tomatoes. Peel the onions and cut into thin rings. Mix tomato and onion with salt, pepper, 4 tablespoons of olive oil and 2 tablespoons of apple cider vinegar.

Sprinkle the basil leaves on top and mix. Divide the salad into 4 bowls. Thinly slice the goat cheese and arrange on top of each salad. Serve with crusty white bread.
