For the salad: rinse mint, parsley and basil, shake dry, pluck off leaves and cut into fine strips. Combine herbs with oil and season with salt and pepper.

Rinse and dry tomatoes, remove stalks and cut into 0.5 cm (approximately 1/5 inch) thin slices. Peel mango and cut into thin slices.
3.
Cut cheese into 1 x 4 cm (approximately 1/2 x 1 1/2 inch) strips.

Arrange tomatoes, mango and cheese on a serving plate, drizzle with herb oil and garnish with fresh mint leaves. Serve.
