- 1 Tbsp sunflower oil
- 1 large Zucchini (seeded and cut into thin batons)
- 3 cups extra-firm Tofu (cubed)
- 1 large Red pepper (sliced)
- 2 cups Snap pea
- 2 Tbsps low-sodium soy sauce
- 1 Tbsp Rice wine vinegar

Preparation steps
1.
Heat the olive oil in a large wok set over a high heat until hot.
2.
Add the tofu and courgette, and stir-fry for 2 minutes, tossing occasionally
3.
Add the peppers and mangetout, and continue to stir-fry for a further 2 minutes until tender.
4.
Add the soy sauce and rice wine vinegar and cook until reduced by half.
5.
Spoon into bowls and serve immediately for best results.
