70 milliliters Apple juice
150 grams Strawberries
4 Tbsps liquid honey
150 grams Mascarpone
80 grams Yogurt (0.1% fat)
1 Vanilla bean (scraped)
150 grams Ladyfinger
3 Kiwi
mint (for garnishing)

Preparation steps

Rinse and dry strawberries, hull and coarsely chop.

Rinse and dry rhubarb, peel and cut into 1.5 cm (approximately 0.5 inch) pieces. Combine apple juice, rhubarb and strawberries in a pan and gently cook until fruit is just tender, add honey for sweetness if desired. Cool. Combine mascarpone with yogurt, vanilla and 2- 3 tablespoons of honey and mix until smooth. Halve ladyfingers. Line 4 dessert bowls with half of cookies. Top with half of rhubarb compote and half of mascarpone cream. Repeat layers one more time. Refrigerate for at least 2 hours.

Peel kiwifruit and cut into wedges or slices,. Top tiramisu with kiwi and garnish with mint. Serve.
