1 Tbsp lemon juice

Preparation steps

Preheat the oven to 100°C convection.

Beat the egg whites until stiff, gradualy working in the powdered sugar until the cream forms shiny. roughly equal peaks. On a lined baking tray make 4 mounds from the egg white mixture with a tablespoon, flatten slightly and bake in preheated oven for about 1 hour, until the meringues are crisp, but still light. Remove and let cool.

Rinse rhubarb, trim ends, cut into pieces and boil covered with the sugar and the lemon juice. Set aside, uncover and let cool. Rinse, trim and cut into pieces the strawberries.

Chop the chocolate and melt in 5 tablespoons cream. Beat the remaining cream until creamy.

Serve the meringues on plates. Put cream and chocolate sauce on each and garnish with the rhubarb, strawberries and pistachios.
