60 grams butter
50 grams Pastry flour
½ l milk

100 grams Quark
100 grams Camembert (well chilled)
80 grams Butter cheese (grated)
4 egg yolks
6 egg whites
butter (for the mold)
breadcrumbs (for the mold)

Preparation steps

1.

Melt butter and stir in flour. Pour in milk, stirring, and simmer for a few minutes. Season with salt, pepper and nutmeg and remove from heat.

Add quark, cheeses and egg yolks to mixture. Grease bottom of soufflé dishes and sprinkle with breadcrumbs.

3.

Beat egg whites until stiff and stir 1/4 into cheese mixture. Gently fold in remainder of egg whites and fill ramekins 2/3 of the way.

4.

Bake in a preheated oven at 180°C (approximately 350°F) on the middle rack for about 30 minutes until golden brown. Serve immediately in ramekins.
