60 grams butter
50 grams Pastry flour
½ l milk

100 grams aged Gouda (grated)
80 grams Butter cheese (grated)
4 egg yolks
8 egg whites

breadcrumbs (for the pan)
Parmesan (for sprinkling)

Preparation steps

1.

Melt butter and add flour and milk, whisking, simmer for a few minutes and season with salt, pepper and nutmeg. Remove from heat. 

2.

Whisk quark with two cheeses and egg yolks. Butter soufflé pan (20 cm in diameter) (approximately 8 inches) and sprinkle with breadcrumbs.

Beat egg whites until stiff and fold 1/4 into quark mixture. Fold in the rest of egg whites. Spread mixture in a pan (up to 3/4).

Bake in preheated oven at 180°C (approximately 350°F) for about 30-40 minutes or until golden brown. Remove from the oven and sprinkle with Parmesan, serve immediately.
