- 2 Tbsps vegetable oil
- 23 ozs braising Steak (sliced)
- 1 cup Coconut cream
- 2 Tbsps Massaman Curry paste
- 1 cup Coconut milk
- 1 cup vegetable stock
- ½ cup unsalted, roasted Peanuts
- 2 medium potatoes (cut into small chunks)
- 1 Cinnamon stick
- 2 bay leaves
- 4 Cardamom (lightly crushed)
- 2 Tbsps light brown sugar
- 1 Tbsp Tamarind paste
- 1 Tbsp Fish sauce

Preparation steps
1.
Heat the oil in a large pan over a medium heat. Add the beef and cook, stirring constantly, until evenly browned. Transfer to a plate and set aside.

Add 2 tablespoons coconut cream to the pan and cook for about 20 seconds until hot. Add the curry paste and cook for 1 minute.

Add the beef and juices to the pan with the coconut milk, stock, peanuts, potatoes, cinnamon stick, bay leaves, cardamom pods, sugar, tamarind paste, fish sauce and the remaining coconut cream. Stir until well mixed.
4.
Reduce the heat to low. Cover and simmer, stirring occasionally, for 1-1 1/2 hours until the meat is tender. Serve with boiled rice.
