Are these pancakes or rather curd cakes? Syrniki are low in fat and high in protein. The grainy cottage cheese makes it possible. The high protein content satiates well and also boosts the metabolism, because the body needs far more energy to process the nutrient than for fats or carbohydrates. This effect is also called food-induced thermogenesis.

Syrniki are indispensable in Eastern European cuisine and are served for breakfast or as a dessert. The original recipe is prepared with tworog or quark, which is very similar to grainy cottage cheese.

2 Tbsps Raw cane sugar
1 Tbsp Almond flour
3 Tbsps whole spelt flour (+ some flour to work with)
2 generous pinches lemon zest
1 egg (M)
3 stalks Rhubarb (10 oz)
½ Vanilla bean
9 ozs Strawberries
1 Tbsp butter

Preparation steps

Transfer cottage cheese to paper towels or clean dish towel and gently pat dry. Thoroughly mix cottage cheese, 1 tablespoon sugar, almond flour, spelt flour, lemon zest, and egg. Let dough rest for about 20 minutes.

Clean the rhubarb, wash and cut into small pieces. Cut the vanilla pod in half lengthwise and scrape out the pulp with a knife. Place rhubarb in a small saucepan with vanilla pulp and pod, remaining sugar, and 3 Tbsp water. Bring to a boil and cook over low heat for about 5 minutes until al dente. Remove from heat.

Take a heaping tablespoon of the cheese mixture, form small pancakes and dust with a little flour on both sides. Use up the rest of the dough in the same way. Heat a little butter in a frying pan and fry the syrniki over medium heat until golden; turn carefully in between. Remove finished syrniki from pan and keep warm. Do the same with the rest.

While the syrniki fry, clean, wash and chop strawberries. Add the strawberries to the rhubarb and stir. Serve the syrniki with the strawberry-rhubarb ragout and enjoy it warm.
