Swiss Cheese and Sausage Salad
Peel sausage and cut into very thin slices. Cut cheese into fine strips. Finely chop pickled cucumbers. Peel onion and cut into thin slices. Peel horseradish and grate finely.
Whisk vinegar with broth and oil, season with salt, pepper and mustard. Toss salad ingredients with the dressing and let stand for 30 minutes. Spread salad on plates and garnish with parsley, serve immediately.
