Preparation steps
Heat milk in a small pot until lukewarm. Mix flour, salt, yeast and sugar in a mixing bowl.
Add 1 egg, lukewarm milk and the butter. Knead with the dough hook of a hand mixer to a smooth, pliable dough.
Sprinkle the work surface with some flour. Knead with your hands and shape into a ball.
Put back in the bowl, cover with a kitchen towel and let rise in a warm place until doubled in bulk, about 40 minutes.
Knead dough on floured work surface again and roll out to about 1 cm (approximately 1/2 inch) thick. With a cookie cutter (14 x 10 cm) (approximately 6 x 4 inches), cut out 10 rabbit shapes.
Line 2 baking sheets with parchment paper and then use an offset spatula to transfer cookie cut-outs to the sheets. Separate the remaining egg. Whisk the egg yolk with milk and brush over cut-outs. (Reserve egg white for another use)
Sprinkle cut-outs with almonds and press in cranberries for eyes. Bake one sheet at a time on middle rack of preheated oven at 180°C (fan 160°C, gas: mark 2-3) (approximately 350°F) for 20-25 minutes. Cool on a wire rack before serving.
