Preparation steps

1.
Peel and dice the pineapple.
2.
Pour the sugar into a deep-bottomed pan. Add the water and place over a medium heat.
3.
When all the sugar has dissolved and the syrup is boiling, add the pineapple cubes.
4.
Lower the heat slightly and continue cooking until the syrup turns into amber-colored caramel. Then add the drops of lemon juice and gently mix together to coat the pineapple.
5.
Remove from heat and take pineapple cubes out of pan using two forks. Place on plates and leave to cool before serving.
