- 1 large egg
- 2 egg yolks
- ½ cup milk
- ½ cup double cream
- 1 Tbsp water
- ⅔ cup fresh Raspberries
- 2 Oranges (segmented)

Preparation steps
1.
Beat together the sugar, egg and the egg yolk to a viscous cream in a mixing bowl.

Combine the milk and cream in a small saucepan and bring to the boil.
3.
Gradually mix into the egg mixture and then pass through a sieve into a jug.

Combine 1 tbsp of caster sugar with 1 tbsp water in a small saucepan and cook over a medium heat until the sugar is golden-brown. Spoon into 1 mould and swirl until a caramel film forms on the base.

Pour the egg custard on top. Line a baking dish with a tea towel and then place the mould on top. Half-fill the dish with hot water.
6.
Bake at 150°C | 300F | gas 2 for 1 hour until set with a slight wobble at the centre.
7.
Remove from the oven and leave to cool at room temperature before chilling for 2 hours.
8.
Dip the mould into hot water to help release the caramel pudding. Invert onto a serving plate and serve with the fruit, almonds, and mint sprigs.
