Ingredients

For the custards
2 large, firm Pear (peeled and cut into fine slices)
4 cups milk
½ cup caster sugar
1 Vanilla bean (seeds scraped out)
4 eggs
For the garnish
Fruit
½ cup Dark chocolate (melted)

Preparation steps

1.
Preheat the oven to 160°C | 325F | gas 3

Place the pear slices into the bottom of greased ramekins. You may need to cut to fit. Place the ramekins in a roasting tin.
3.
Bring the milk to the boil in a pan with the sugar and seeds from the vanilla pod. Bring off the heat and allow to cool slightly.
4.
Beat the eggs in a bowl, then pour the milk over gradually, whisking constantly as it thickens.
5.
Pour into the ramekins. Pour boiling water into the bottom of the roasting tin to come halfway up the sides of the ramekins.
6.
Bake for 35-40 minutes, then allow to cool.
7.
Dip the ramekins briefly into boiling water to release the custard, then turn out onto plates.
8.
Decorate with fruit and drizzle over the melted chocolate.
