Preparation steps

1.
Pre-heat the oven to 190°C (170° fan) | 375F | gas 5. Combine the flour, salt, sugar and yeast in a mixing bowl.

Mix in the oil and water and combine thoroughly to form a dough. Roll the doll out and line a 9 inch circular baking tray.
3.
Bake for 10 minutes in the oven and then remove.
4.
Top with the ricotta cheese, strawberries and a little mint and return to the oven for 15 minutes.
5.
Meanwhile, prepare the mint pesto by blitzing together the garlic, mint and basil in a food processor. Slowly add the olive oil while blending until it emulsifies and you have a thick pesto.
6.
Serve alongside the pizza when ready.
