2 cups all-purpose flour

½ tsp cream of tartar
¼ cup butter
¼ cup caster sugar
0.333 cup raisins
cup 2% milk
1 tsp lemon juice

Preparation steps

1.
Heat the oven to 220°C (200° fan) 425°F gas 7. Grease and lightly flour a baking tray.

Sift the flour, bicarbonate of soda and cream of tartar into a large mixing bowl. Lightly rub in the butter until the mixture resembles breadcrumbs.
3.
Stir in the sugar and raisins. Make a well in the centre and pour in the milk and lemon juice. Mix to a soft dough and turn out on to a lightly floured surface.
4.
Knead lightly until smooth and roll or pat out to 1cm|1/2" thickness. Stamp out rounds using a 5 cm|2" cookie cutter. Re-roll the trimmings and cut out more rounds.
5.
Place the scones on the baking tray and bake for 10-15 minutes, until well-risen and golden. Cool on a wire rack. Dust lightly with icing sugar.
