- 150 grams Yogurt (0.1% fat)
- 1 Tbsp grated Lime zest
- 2 Tbsps Lime juice
- 4 Tbsps powdered sugar
- 2 sheets clear gelatin
- 8 Cape gooseberries
- 8 Kumquat
- 1 Sharon fruit
- 12 Puffed rice (with chocolate, squares)

Preparation steps

Mix yogurt with lime zest, lime juice and 3 tablespoons powdered sugar.

Soak gelatin in cold water until softened, about 10 minutes. Still dripping wet, transfer gelatin to a small pot and heat until melted. Stir in 2 tablespoons of the yogurt-lime mixture, then fold into remaining lime-yogurt mixture and refrigerate about 30 minutes.

Top chocolate puffed rice squares with a little of the yogurt gelatin, then refrigerate about 30 minutes. Carefully pull back husks of cape gooseberries (but leave attached to berries). Rinse kumquats with hot water and cut crosswise into slices. Rinse persimmon and cut into thin slices.
4.
Line rims of puffed rice squares with lime-gelatin and smooth. Decorate with fruit and sprinkle with remaining sugar.
