2 eggs
1 cup Buckwheat flour
2 tsps gluten-free Baking powder
1 pinch salt
1.333 cups milk
2 Tbsps sunflower oil (plus extra for frying)
1 ⅔ cups Roquefort cheese
1 cup chopped Walnut
2 Pear (peeled & sliced)

Preparation steps

1.
Whisk the eggs in a mixing bowl until frothy.
2.
Whisk in the flour, baking powder, salt and milk and beat well until smooth.
3.
Heat a little oil in a heavy frying pan.
4.
Spoon tablespoons of the batter into the hot pan to make 5cm|2” pancakes. Cook until small bubbles appear and underside is golden. Turn over the blini and cook the other side.
5.
Repeat until all the batter is used, layering the blini with non-stick baking paper until required.
6.
Spread with the cheese and sprinkle with walnuts. Serve topped with a pear slice
