For the batter
1 ¼ cups all-purpose flour
1 egg
1.333 cups milk
1 pinch salt
olive oil
For the spinach mixture
7 ozs Spinach
1 clove garlic cloves (finely chopped)
1 shallot (finely chopped)
2 Tbsps butter
2 Tbsps plain flour
cup milk
1 cup Ricotta cheese
8 Tbsps grated Parmesan
salt
freshly ground Black pepper
grated Nutmeg
1 ½ Tbsps melted butter

Preparation steps

Heat the oven to 200°C (180°C fan ) 400°F, gas 6. Grease a baking dish

For the batter: mix together the flour, egg, milk and salt.

Add a little oil to a hot frying pan and add a small ladleful of the batter to the pan. Tilt the pan to spread the mixture evenly and cook until golden. Continue like this until the batter is used..

For the spinach mixture: blanch the spinach in a pan of boiling salt water, drain and squeeze out. the excess water. Chop roughly.

Heat 2 tablespoons of oil in a frying pan and cook the garlic and shallot iuntil softened. Add the spinach, mix well and remove from the heat.

Melt the butter in a pan and stir in the flour. Gradually stir in the milk and simmer on a medium heat for 2 minutes to thicken. Remove from the heat and leave to cool.
7.
Stir in the ricotta, 4 tablespoons parmesan and the spinach and season well with salt, ground black pepper and nutmeg.
8.
Spread the crepes with the spinach mixture leaving 1cm|1/2" around the edge and fold into a triangle. Place in the baking dish, drizzle with the melted butter and sprinkle with the remaining parmesan.
9.
Bake for about 20 minutes until golden brown.
