Summer Salad with Oyster Mushrooms
Rinse salad greens, tear into bite-sized pieces and pat dry thoroughly. Slice tomatoes. Peel onion and cut into rings. Rinse celery and cut into diagonal slices.
Heat butter in a pan. Clean oyster mushrooms and cut into large pieces. Saute for a few minutes.Whisk all dressing ingredients together and toss salad greens with the dressing.
Rinse parsley, shake dry, chop finely and sprinkle over salad. Top with warm oyster mushrooms and serve immediately.
