1 large carrot
½ Cucumber
300 grams Smoked tofu
1 red Bell pepper
2 scallions
½ head Iceberg lettuce
1 handful fresh Fresh herbs (such as, coriander, Thai basil, mint)
8 sheets Rice paper (22 cm diameter)

Preparation steps

Cook the rice noodles according to package instructions. Then drain and cut small with scissors.

Peel the carrots and the cucumber. Halve the cucumber, scrape out the seeds and then cut both into thin sticks. Also, slice the tofu. Rinse and trim the bell pepper and cut into thin sticks. Rinse and trim the scallions, cut into pieces about 10 cm long (approximately 4 inches) and then cut into fine strips. Rinse the lettuce, shake dry and cut into strips. Rinse the herbs, shake dry and pluck off the leaves.

Fill a shallow dish, slightly larger than the sheets of rice paper, with water. Spread out a cloth and keep a second cloth to hand. Place the rice paper sheets into the water and soak for about 1 minute. Then gently spread out on the cloth and pat dry with the second cloth.

Spoon on the prepared ingredients, turn the edges and roll up.

Serve immediately.
