Preparation steps
1.
Boil 1 liter (approximately 1 quart) of water and let cool to about 80°C (approximately 175°F). Pour in the tea, and let steep for 3 minutes. Strain the tea, cool, and sweeten to taste.
2.
Peel and quarter the apples. Remove the seeds and cut into wedges. Drizzle immediately with lemon juice. Rinse and thinly slice the cucumber. Rinse and halve the orange. Slice the orange, being sure to remove any seeds.
3.
Rinse the mint, and remove the leaves from the stems. Rinse the borage gently in a bowl of water, then drain on a paper towel. Reserve some mint and borage flowers for garnish.
4.
Mix all the ingredients together in a bowl, and chill overnight in the refrigerator. Garnish with the mint and borage, then serve.
