- ½ cup xylitol
- 1 cup Pistachio
- 3 Tbsps sunflower oil
- 8 sheets phyllo pastry
- ½ cup honey
- 1 Tbsp ground cinnamon
- 1 Tbsp melted butter

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Brush a rectangular baking tin with oil.
2.
Blend the xylitol and pistachios in a food processor until finely ground.
3.
Cut the filo sheets in half horizontally and layer half the sheets in the tin, brushing each with the oil.
4.
Spoon the pistachio mixture over the top. Layer the remaining sheets on top, brushing lightly with oil as before
5.
Score the top of the baklava into 12 pieces with a sharp knife.
6.
Mix together the honey, cinnamon and melted butter and drizzle over the top. Bake for about 20 minutes until crisp and golden.
