These delicious fritters are rich in fiber but contain no added sugar.
These fritters make a sweet special occasion fall breakfast or a lovely dessert.

- 1 ¾ cups all-purpose flour (plus extra for dredging)
- 3 Tbsps xylitol (or Stevia sugar substitute)
- 1 Tbsp Baking powder
- ¼ tsp salt
- ½ tsp ground cinnamon
- 2 large eggs
- 1 ¼ cups milk
- ½ tsp vanilla extract
- 3 Tbsps butter (melted)
- 4 small, eating Apple (peeled and sliced)
- vegetable oil (for frying)
Preparation steps
1.
Stir together the flour, xylitol, baking powder, salt and cinnamon in a mixing bowl.

Whisk together the eggs, milk and vanilla, then whisk in the butter to make a thick batter.
3.
Put some flour on a plate and dredge the apple slices until lightly coated, shaking off any excess flour.
4.
Heat a little oil in a frying pan and cook 3 apple slices for 2-3 minutes until lightly browned.
5.
Ladle about 2 tablespoons of the batter over each apple slice. Cook, until bubbles appear on the surface of the pancakes and the undersides are golden brown.
6.
Add more oil to the frying pan, as needed and turn over the pancakes. Cook until golden on the underside.
7.
Repeat with the remaining apples and batter. Serve immediately or keep warm in a low oven.
