- ½ cup butter
- ½ cup xylitol
- 3 eggs (separated)
- 1 pinch salt
- 1 ¾ cups all-purpose flour
- 1 tsp Baking powder
- ½ cup chopped Walnut
- 3 very ripe Banana
- 1 Tbsp lemon juice
- For the topping
- 1 cup chopped Walnut

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease and line a 175g|1 1/2 lb loaf tin with non-stick baking paper.

Beat the butter in a mixing bowl until soft. Gradually beat in the xylitol.

Gradually beat in theegg yolks until smooth
4.
Whisk the egg whites with the salt until stiff.
5.
Sift the flour and baking powder into the egg yolk mixture and gently stir in with the walnuts until incorporated.
6.
Mash the bananas roughly with the lemon juice and fold into the butter mixture. Gradually fold in the egg whites until thoroughly blended.
7.
Spoon into the tin and bake for 40-45 minutes until golden brown and risen. Sprinkle the top with the walnuts for the last 10 minutes of cooking time. Cool in the tin for 10 minutes, then turn out onto a wire rack to cool completely.
