¼ cup butter
4 Tbsps Agave syrup
2 Tbsps Fructose
1 ¼ cups self-rising flour
¼ tsp Mixed spice
¾ tsp ground ginger

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line 2 large baking trays with non-stick baking paper.

Melt the butter, syrup and fructose in a pan until just melted. Remove from the heat and set aside to cool slightly.
3.
Stir in all the remaining ingredients to form a smooth dough. The dough should be quite dry; if it is too wet, add more flour.
4.
Place small spoonfuls, well apart on the baking trays and bake for about 10 minutes until golden and cracked on top. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
