- ½ cup xylitol
- 1 cup chopped Nut (almonds, pistachios)
- ½ cup raisins
- ¼ cup butter (melted and cooled)

1 Kitchen scale, 1 Cutting board, 1 Small knife, 1 Large knife, 2 Bowls, 1 Hand mixer, 1 Teaspoon, 1 Baking sheet, 1 Parchment paper, 1 Tablespoon, 1 Wire rack, 1 Cookie tin
Preparation steps
1.
Heat the oven to 190°C (170° fan) 375°F gas 5. Line 2 baking trays with non-stick baking paper.
2.
Put the flour, spice, xylitol, nuts and raisins into a mixing bowl and stir to combine.
3.
Beat together the butter and eggs and stir into the flour mixture to form a dough.
4.
Turn out the dough and cut in half. Shape each half into a log 24cm|10" long.
5.
Place the logs on the baking trays and flatten each until about 7cm|3" wide. Bake for 20 minutes, then leave to cool for 20 minutes.
6.
Cut each piece into about 12 slices with a serrated knife. Space the biscuits slightly apart and return to the oven for a further 15 minutes until lightly golden and crisp. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
