- For the pancakes
- 500 milliliters milk
- 3 eggs
- 250 milliliters Pastry flour
- 2 Tbsps melted butter
- 1 pinch salt
- butter (for cooking)
- For the filling
- 12 slices Smoked salmon
- 200 grams cream cheese
- 200 grams Greek Yogurt (0.1% fat)
- 2 Tbsps grated Horseradish (fresh or prepared)
- juiced lemons
- 1 bunch Arugula
- salt
- 1 scallion
- Lemon peel

Preparation steps

For the pancakes: Whisk all ingredients together and let stand for 20 minutes. Heat butter in a pan and cook batter, a bit at a time, until golden brown on each side. Remove and repeat until all batter is cooked.

For the filling: Combine cream cheese, yogurt, horseradish and lemon juice. Season with salt.

Rinse arugula and remove stems if needed. Rinse scallions and thinly bias-slice white and light green sections.
4.
Fill each pancake with some yogurt mixture, then add salmon, arugula, scallions and lemon zest. Top with remaining yogurt mixture and serve.
