Preparation steps

1.

Cut lid and bottom from pineapple and discard. Hollow out pineapple with a sharp knife. Remove stalk, cut flesh into cubes and mix with half the chopped tropical fruit.

Fill hollow pineapple with fruit mixture and place on baking sheet. Whip egg whites and sugar until very stiff and glossy, pour into a piping bag and use to pipe a lid on the pineapple. Bake pineapple at 200°C (approximately 400°F) for about 5-10 minutes, until top turns brown. Spread on plates and garnish with mint leaves and remaining chopped fruit.
