- 20 Mini-squid
- 100 grams Sole fillet
- 2 egg whites
- salt
- white peppers
- 2 Tbsps Lime juice
- 1 Tbsp chopped, mixed Fresh herbs
- 4 Tbsps olive oil
- 2 fresh lemons

Preparation steps
1.
Rinse calamari and pat dry. Rinse sole fillets and lightly season with salt, cut into pieces and put into freezer for 20 minutes. Grind through a meat grinder and sprinkle with lemon juice and pepper.

Beat egg whites until stiff and fold into sole mixture. Add herbs and mix gently. Place mixture into a piping bag and fill calamari with it. Secure opening with toothpicks. Heat oil in a pan and saute calamari for about 5 minutes per side.
3.
Rinse lemons in hot water, wipe dry, cut in half and sear on cut sides in the same pan. Serve calamari accompanied by seared lemons.
