2 large Tomatoes (skinned, deseeded and chopped)
1 red Bell pepper (deseeded and diced)
1 Zucchini (diced)
1 cup green Olives (pitted and sliced)
4 medium Squid (cleaned, tentacles chopped)
½ cup white wine
To garnish

1 Bowl, 1 Measuring cups, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Teaspoon, 1 Mandoline, 1 Sieve, 1 Brush, 1 Aluminum foil, 1 Tablespoon, 1 Baking sheet

Preparation steps

Heat the oven to 200°C (180° fan) 400°F gas 6. Butter an ovenproof baking dish.
2.
Heat the oil in a frying pan and gently cook the onion, garlic and carrot until softened. Add the tomatoes, cook for 5 minutes then add the bell pepper and courgette.
3.
Cook for 2 minutes then stir in the olives and chopped squid tentacles. Season to taste with salt and pepper and stuff the mixture into the squid bodies. Secure closed with cocktail sticks and place in the baking dish.
4.
Spoon any remaining stuffing around the squids, pour over the wine and cover tightly with tin foil.
5.
Cook for 15-20 minutes or until the squid is cooked through and serve garnished with black olives and thyme.
