½ tsp grated Lemon peel
2 Tbsps lemon juice
Strawberries (for garnish)

Preparation steps

Bring the strawberry juice to a boil in a pot with half of the lemon peel and allow to cool. Strain through a sieve, mix with the lemon juice and sparkling wine, and pour into a shallow dish. Place in the freezer. Stir every 30 minutes with a fork to prevent large ice crystals from forming. Freeze for about 4 hours.

Meanwhile, rinse the strawberries, drain and leave whole or cut in half. Rinse the mint and pat dry. Serve the granita in bowls garnished with whipped cream, strawberries, remaining lemon peel and mint.
