Ingredients

6 sheets gelatin
500 grams cream cheese
1 Tbsp grated Orange peel (organic)
4 egg whites
75 grams powdered sugar
75 milliliters Whipped cream
Elderflower (for garnish)

Preparation steps

1.

For the crust: Crumble cookies and mix with butter to make a paste. Place a cake ring on a plate, line it with plastic wrap or parchment paper and press crust mixture into ring, then chill.

For the filling: Rinse strawberries, remove stems and cut in half.

Dissolve gelatin in cold water. Combine cream cheese and orange zest. Heat 5 tablespoons of the cream cheese mixture on the stove and add squeezed gelatine. Pour gelatin mixture into remaining cream cheese mixture and stir. Beat egg whites and powdered sugar stiff and fold into cream cheese mixture. Beat cream until stiff and carefully fold into cream cheese mixture.

Place half of the strawberries on the crust and pour cream over top. Chill for about 4 hours.

Remove cake ring, top with remaining strawberries and garnish with elderflower. Slice and serve.
