Preparation steps

1.

Thaw broccoli. Cut meat into 0.5 cm (approximately 1/4 inch) slices. Rinse bell peppers, trim, cut in half, remove seeds, remove all ribs and dice. Peel garlic. Trim and rinse leek and cut diagonally into 1 cm (approximately 1/2 inch) narrow slices. Rinse bean sprouts and drain. Heat the oil over high heat in a wok or large, heavy skillet. Brown the meat in the oil in 2 batches while stirring, about 2 minutes, then remove from wok. Mix meat with 2 tablespoons soy sauce and season with pepper.

2.

Stir-fry bell peppers in the oil that remains in the wok for 3 minutes. Press in garlic, add broccoli and stir-fry for another 5 minutes. Season with 1 tablespoon soy sauce, sherry, salt, pepper, sambal oelek, sugar and lemon juice. Add leek, stir-fry for 2 minutes, then add sprouts and meat with soy sauce. Mix well and let stand briefly before serving.
