500 grams Pork tenderloin (ready to cook)
4 Tbsps soy sauce
5 Tbsps Broth
2 tsps honey
2 Tbsps Vinegar
¼ tsp Red Curry paste
300 grams Udon Noodle
200 grams Mung bean sprouts
1 shallot
200 grams shiitake mushrooms
2 tsps sesame oil
150 milliliters Broth
soy sauce
lemon juice

Preparation steps

Rinse pork, pat dry, trim as needed, cut into strips and let rest in a bowl with a mixture of soy sauce, vegetable broth, honey, vinegar and red curry paste.

Meanwhile, cook noodles in a large pot of boiling water until al dente.

Rinse mung bean sprouts in a colander. Drain noodles, briefly rinse with cold water and drain again. Peel shallot and chop. Trim shiitake mushrooms and cut into slices.

4.

Heat oil in a wok, fry shallot and mushrooms while stirring. Remove pork from marinade and fry pork in the wok. Add noodles, sprouts, remaining marinade and vegetables to the wok and fry while stirring. Season to taste with soy sauce and lemon and serve.
