200 grams Asian Egg noodle
1 pc fresh ginger (about 5-6 cm) (approximately 2 inches)
2 garlic cloves
1 Red chili pepper
4 scallions
100 grams shiitake mushrooms
4 Tbsps sunflower oil
2 fresh cilantro

Preparation steps

1.

Cook the noodles in boiling salted water for 2 minutes. Rinse under cold water until cool and drain.

Peel the ginger and garlic and chop very finely. Cut the chile in half lengthwise, remove the seeds and cut into thin strips. Trim the scallions and chop finely. Pluck the cilantro leaves. Wipe the mushrooms with a damp cloth and cut into slices.

3.

Heat the oil in a wok or large frying pan and sauté the garlic, ginger, chile and mushrooms for about 3 minutes. Add the noodles and scallions and stir-fry for 3 minutes.

4.

To serve, arrange in serving bowls and garnish with cilantro leaves.
