4 Tbsps thick honey
4 Tbsps Dijon mustard
4 Tbsps olive oil
1 tsp Mustard seed
2 lemons (finely grated zest and juice 2 lemons)
12 Chicken wing
To garnish
1 scallion

Preparation steps

1.
Mix together the honey, mustard, olive oil, mustard seeds, lemon zest and juice.
2.
Put the wings into a large non metallic oven proof dish and season with salt and ground black pepper.
3.
Drizzle over the honey and mustard mixture and stir to mix into the chicken wings.
4.
Cover, chill and marinate for about 20 minutes.
5.
Heat the oven to 200C (180C in a fan oven) 400F, gas 6.
6.
Roast the chicken wings for 40 minutes until the chicken wings are golden and thoroughly cooked through.
7.
Meanwhile, trim and shred the scallion and put into a bowl of cold water. Chill (this will make the scallions curl).
8.
Serve chicken wings garnished with spring onion curls.
