For more pep, add half a teaspoon of caraway, marjoram and a bay leaf to the onion cubes - this makes the onion sauce not only more aromatic, but also more digestible.

4 Steak (each about 200 grams)

Preparation steps

1.

Peel potatoes, cut in half lengthwise and cook in boiling salted water. Lift from pot and drain. Peel 4 onions and cut into rings. Peel 1 onion and cut into cubes.

Pepper steaks vigorously. Heat oil in a pan and add steaks. Sear for 1 minute on each side. Reduce heat and cook steaks for about 2-4 minutes on each side until centers reach desired internal temperature. Season with salt, remove from pan and wrap with aluminum foil to keep warm.

Add diced onion to pan with fat, sprinkle with flour and fry until golden brown. Baste with broth and boil down over high heat. Season with salt and pepper.

Continue cooking pre-cooked potatoes in 1 tablespoon of hot butter until golden brown. Season with salt and pepper.

5.

Heat clarified butter in a frying pan and brown onion rings while turning occasionally. Remove from pan and drain on paper towels.

6.

Place warm steaks on plates with roasted potatoes. Baste with pan sauce and top with onion rings. Serve with small pickles if desired.
