Steak and Noodle Salad Bites
- 14 ozs filet mignon
- 2 Tbsps soy sauce
- Ginger powder
- 5 ozs Rice noodles
- 2 Tbsps sesame oil
- 2 Tbsps Rice vinegar
- 2 Tbsps sunflower oil
- 1 Tbsp vegetable stock
- Oyster sauce (to taste)
- 1 large carrot (grated)
- 1 small Persian Cucumber (diced)
- 2 scallions (cut into rings)
- 4 large Lettuce

Place the beef, soy sauce and a pinch of ginger in a bowl, mix well and marinate for around 30 min.
Soften the rice noodles in lukewarm water for 10 min and then cook until soft. Drain and mix with 1 tsp oil.
Heat the sesame oil in a pan and fry the meat on a high heat for 2-3 minutes on both sides. Wrap in aluminium foil and leave to rest.
Mix together the vinegar and the sunflower oil and stir in the stock. Season with salt, ground black pepper and oyster sauce.
Remove the meat from the foil and mix with the noodles and the vegetables. Arrange on the lettuce leaves and serve with the dressing.
