Squid with Wheat Berries
Heat 2 tbsp of olive oil in a frying pan, add the calamari and cook very gently for about 5 minutes, stirring. Add the tomato, sprigs of thyme and crushed garlic. Season and sweat for 10 minutes stirring from time to time.
In the meantime, bring a saucepan of salted water to the boil, add the wheat and cook as indicated on the packet.
When the calamari is ready, transfer to a warm dish and keep hot. Strain the wheat and transfer immediately to the frying pan used for the calamari. Add the remainder of the oil and some pepper then stir well over a medium heat for 2 to 3 minutes.
Divide the wheat between six dishes and top with the calamari fricassee. Serve hot.
