- 16 ozs Calamari
- 2 Tbsps olive oil
- 1 clove garlic cloves (peeled and crushed)
- 1 red chili pepper (seeded and finely sliced)
- 1 Tbsp fresh rosemary (plus extra for garnish)
- 6 cherry Tomatoes (rinsed and halved)
- 4 crusty Ciabatta
- 4 Tbsps Garlic Mayonnaise
- 4 leaves Boston butter lettuce (rinsed and dried)
- 1 cup canned chickpeas (rinsed and drained)
- coarse salt (to taste)
- freshly ground Black pepper (to taste)
- 1 lemon (cut into wedges)

- wooden Skewer (presoaked in water for 20 minutes)
Preparation steps
1.
Rinse the squid under cold running water and blot dry with paper towels. Cut into 2-inch pieces.

Mix the squid in a bowl with the oil, garlic, chili pepper, and rosemary. Allow to marinate for 15 minutes.

Meanwhile, prepared the grill for direct grilling. Preheat to medium heat.

Thread squid pieces and tomato halves onto small wooden skewers.

Cut the ciabatta rolls in half horizontally. Place on the prepared grill (watching carefully) and toast the bread until light golden brown.
6.
Spread about 1 tablespoon of mayonnaise on each toasted roll, top with lettuce leaves and garbanzo beans.
7.
Season marinated squid with salt and pepper. Place on fish grate and cook the 3 to 4 minutes, turning frequently, or until lightly charred.
8.
Arrange kebab on top of garbanzo beans. Season with salt and pepper and serve with lemon wedges.
