- 500 grams fresh Spinach
- 2 ripe Avocados
- 2 Grapefruit
- 2 Celery
- 400 grams lamb (from the leg or shoulder)
- salt
- freshly ground peppers
- 2 Tbsps water
- juice of lemons
- 5 Tbsps olive oil
- 3 Tbsps sunflower oil
- 1 garlic clove
Preparation steps

Trim spinach, rinse and drain. Cut lamb into strips. Heat sunflower oil in a large pan, fry lamb briefly on all sides and season with salt and pepper. Peel grapefruit with a sharp knife and split into segments. Peel avocados, cut in half, remove pits and cut into large slices.

Rinse celery and cut into strips. Peel garlic and squeeze through a garlic press. Whisk together olive oil, lemon juice, water and garlic until creamy and season with salt and pepper. Arrange spinach, avocados, grapefruit segments, celery and lamb pieces on 4 large plates. Drizzle with the sauce and serve.
